Sámi food traditions are built on respect for nature, the seasons, and the principle of using the whole animal. The food has always been simple, nutritious, and closely connected to reindeer herding, hunting, and fishing.
The reindeer has been—and still is—one of the most important pillars of Sámi food culture.
In Sámi tradition, almost the entire reindeer is used. Meat, fat, blood, marrow, hide, and bones have all served a purpose—both as food and as resources. This reflects sustainable food practices and strong traditions that go far back in time.
Fish has always been a natural part of the Sámi diet, especially in coastal and river areas, but also inland through fishing in lakes and waterways. Fish was often boiled, fried, smoked, or dried so it could be stored over time.
Fish was used both for everyday meals and for special occasions, often served simply, with a focus on the natural flavor of the ingredient.
Berries have always been an important part of Sámi food culture and were traditionally gathered according to the seasons. They were used fresh, dried, or preserved, providing both nutrition and essential vitamins throughout the year. Berries were also used as accompaniments to meat and in desserts.
Cloudberries hold a particularly special place in the North. Often referred to as the gold of nature, they are commonly used for festive meals and special occasions—served with cream, or in cakes. Cloudberries add a fresh, slightly tart flavor and connect Sámi food traditions closely to the landscape and the seasons.

Smoked reindeer meat
It’s a seasonal dish that we only serve from September to march. Smoked reindeer meat is absolutely delicious either you’re in the tundra or in a restaurant.
Served with traditinal smoked reindeer, potatoes, mashed turnip and lingonberry jam.

Finnbiff - Reindeer shavings
Finnbiff is not only delicious, tasty and exciting - it is also some of the absolute healthiest meat you can eat. The reindeer live wild, eat healthy, and travel long distances when they graze. They eat many varieties of lichen, herbs and heather, which help to give the meat a unique and mild game taste.
Served with homemade mashed potatoes, carrots, and lingonberry jam.

Biđus

Stežan
